Where it all began

Back in 2009, two colleagues were working together at a 2-star Michelin restaurant, Abode. They eventually became good friends, sharing a passion for the finer details in cooking. Our founders, Charles Dobosz and Adam Smith, then had a dream to open their restaurant. One in which they could put their signature approach to food.

The Grill Opens Its Doors

In April 2010, Grill on the Square opened its doors. Located in a historic Grade II listed building, the old Warrington Post Office, the restaurant quickly became renowned as the place to dine for contemporary, locally sourced, British cuisine. 

With Adam’s attention to detail and Charle’s influence from French dining, Grill on the Squares is one of Warrington’s best and most loved restaurants. 

Welcome to Las Ramblas

Due to the success of Grill on the Square, the portfolio of the Charlie Adam Group started to grow. After researching the local area, Las Ramblas opened in 2014 as a genuinely authentic tapas restaurant, taking inspiration from the streets of Barcelona.

Combining traditional recipes with contemporary twists, Las Ramblas is located in the old Treasury Building and has quickly become the place to be for anyone looking for authentic tapas. Bringing the finest ingredients from Catalonia along with local produce, classic tapas complements individual small plates, with Head Chef and Founder, Adam Smith, heading up the open kitchen. It’s a taste of North East Spain in the heart of the North West of the UK. 

When in Warrington, do as the Italians do 

Situated above Las Ramblas in the remainder of the Treasury Building, is San Lorenzo, Charlie’s Cicchetti Bar and The Terrace Gin & Cigar. Combining genuinely authentic Italian cuisine, cocktails created by our resident mixologists and Venetian small plates, it’s a place people have 

come to love. 

With our open kitchen, wood-fired ovens and the unique marble bar, guests enjoy a truly unique and decadent Italian experience. From a Venetian Bellini, freshly prepared pasta to our renowned Sunday Family Feast, our doors are open for families, couples and parties alike.

The (Hidden) Treasure

The newest addition to the Charlie Adam Group portfolio, The Treasury Building is a truly unique setting in the heart of the town. With private and stylish dining rooms, complete with grand dining tables, elegant furnishings and restored original features, it’s the ideal location for corporate and private events.

With space for between 6 to 16 guests, the rooms are hugely versatile, beautifully elegant and sure to leave a lasting impression. Our Executive Chef, Mike Zuger, is also on hand to adapt the menu to your tastes, whether it’s for private breakfast, lunch or dinner.

Charles Dobosz

Founder

Educated at Ecole Superieure Culinaire Francaise Gregoire Ferrandi, an esteemed culinary school in his home city of Paris, Charles is an esteemed gourmet who’s as passionate about hospitality as he is about food. Moving to England in 2001, his experience as a General Manager and Head Chef has led him to launch numerous restaurants with Adam.

Adam Smith

Founder

Starting his career working for Almond Family Pubs, Adam is a renowned chef hailing from Warrington, Cheshire. He has worked across several prestigious kitchens across the country, including The Chester Grosvenor and Harvey Nichols, before becoming the Head Chef at Abode. A keen football enthusiast, he can usually be seen heading up the kitchen at Las Ramblas.
